I'm not sure you tried the bitterballen. They're just bite sized kroketten, and the gravy description is a little misleading as is the Dutch literal translation of 'ragout'.
The filling is a thick flour-based roux, with meag and veg stock and small amounts of shredded beef. It's a little like condensed soup and always thermonuclear hot when it arrives on the table. They are very rarely home made, as the Dutch have a strong affiliation with the mass-made brands. Stroopwafel and Fries are two of my best choices. Something I can actually eat on the go while roaming around the place. Oh, i must include cannabis chocolates and cupcakes as well!

For breakfast the Dutch also like to eat yogurt or milk with muesli or oatmeal or Brinta.
Oatmeal or Brinta combined with milk is a more traditional Dutch breakfast, which for a long time was unpopular as a breakfast, but gained popularity due to the health benefits.
A lunch dish which also gained popularity, in contrast to the breakfast, is the tosti. The tosti is a sandwich which is made of two bread slices with ham and cheese and made warm with a roaster. The tosti became popular again as a countermovement to the super foods. The result is a slightly sweet, tangy and totally delicious dish.
You can get it as a sandwich, or as a main course with rice. Definitely something to try — maybe at one of our favorite places in Amsterdam to eat Surinamese? The name might not sound the most appetizing, but a good old bowl of pea soup is just the right ticket to warm your bones after a cold, wet day in the Netherlands. Also called erwtensoep, you can find this thick and hearty treat at most low-key neighborhood pubs all autumn and winter.
But Amsterdam being as it is, many places also serve a vegetarian version. There are as many variations of stamppot as there are vegetables. All you need is a base of potatoes, into which you mash or stamp any vegetable you want: carrots and onion hutspot , kale, endive, sauerkraut, and more.
Protein beefs it up, either in the form of bacon bits, smoked sausage, or cheese. You might have had licorice before, but the Dutch version is definitely at the top of the list of foods to try in Amsterdam — if only to say you did it. While it might not be your favorite candy ever, there is an impressively wide variety of flavor and texture combinations.

Sampling different types and ages of Dutch cheese at an Amsterdam market allows food travelers to find their favorite. We sampled these at Noordermarkt.
